My real name is Nigel and I live near Fleet. I have 3 cheeses. Creamy is my youngest, I have had it a year and a day and it is nearly 16 months old.

Thanks to encouragement from the Cheeses fraternity, not least Cheesea, and a few others, we have embarked on cheesemaking training and curd and whey tests (CWT).

We, Creamy and I, have attended two CWT's, the Carré Breton and the Murianengo's recently at Elstead. We were in the places at the Carré Breton's CWT, (5th) and scored reasonably well at the Murianengo day. On both occasions due to very high rennet marks. Souring let us down but we are working on it.

We also signed up with The Cheese Club and took Curd Grades I & II in quick succession, and are now awaiting the release of Curd Grade III details.

My other two cheeses are Bierkaese (6) and Bruder (~9). Bierkaese is out of the Weisslacker dairy (Cheesemeister Weisslacker Jay) and I must say it has loads of natural field flavour.

Bruder was rescued from imminent demise at the local cheesepound, some 3 years ago, and is much loved inspite of all its rind issues.

I have met and competed against a number of you on here, and hope to carry on in that vein.

I am looking for more CWT's we can do in first-curding with just two months to go before we join Lisa and Blu-Cheese in Ripening.
